There is a recipe floating around Facebook called Lazy Eggs. Maybe you have seen it. I did and thought this would be a good breakfast food on schools mornings. Having this conversation with my hairdresser (don’t you discuss recipes with your hairdresser?) she told me about a variation to the recipe that they do. I decided to try it.
Spray a muffin pan with non-stick. I used a roll of flaky biscuits, peeling off a small layer and placed it in the bottom of each tin. Then I sprinkled in diced ham, shredded cheese and placed another layer of biscuit dough on top. I all so wanted to try the Lazy Egg recipe (which does not call for the biscuit dough, but I wanted something the kids could grab and go.) so I repeated the above steps but leaving off the top dough I cracked one egg in each. All this cooked for 18-20 mins at 350 degrees. I wanted to make sure the egg yolks were not runny so I cooked them about 4 minutes longer.
They were good!
I wrapped them individually and placed them in the freezer. My kids will be able to microwave them on those hurried school mornings (which is every morning) and eat them on the go.
