I wish I were sitting on a beach with a Pina Colada in one hand (and don’t forget the little umbrella) and a slice of this cake in the other. Because when you say Pina Colada I think of summer and sand.
This month’s cake represents just that. A Pina Colada cake that not only looks great and is just as smooth on the palate. Not to mention it was easy to make.
The July cake recipe can be found in the Food Network Magazine, January/February 2013 (as well as all the others I have made). It is a yellow cake (made from scratch), a jam-like filling made from dried pineapples, pineapple juice, and cream of coconut. (You can find cream of coconut in the baking isle.) The frosting is a butter cream with more cream of coconut. The cake is topped with dried pineapple and coconut flakes.
The ingredients and construction were simple. I had no problems putting this one together. Which was refreshing after several of the other cakes I have made.
I am calling this one our “back to school” celebration cake.
