With the snow flying around Missouri it was the perfect weekend to make the March cake…Grasshopper Cake. I am happy to report that I encountered no problems making this one! Not only does it taste great but looks just like the picture.
This is a basis chocolate cake. The filling is a milk, sugar, egg, and cornstarch mixture with peppermint extract, white chocolate, mini chocolate chips and green food coloring in it. The topping is a heavy cream and sugar with a little more peppermint extract. The entire recipe was easy. The cake is light with a refreshing taste.
I did cut my tops off to flatten the rounds out before assembly (lesson learned), but since cake is precious in our house I used those pieces with the extra filling and topping.
Because of the peppermint extract this cake would be good to serve around the holidays. Food coloring could be changed to red. Just saying….
